When we release a patch to customer, there is new files added in the patch. So when user unistall the applecation, the added files which is not include in the old version can't be remove.
Is there any method to remove the files which added in the patch when unistall the old version. BTW, we hide the unistall of the patch.

Well the patch has the automatic unistall support for these newly added files, and I don't know of a way to change what the uninstaller does for the old, existing version. Therefore, you're better off not hiding the patch's uninstaller.
The way I handle this scenario though is to have a custom uninstaller that uninstalls all existing copies (full as well as updates) and, once those are removed, can perform any additional cleanup.

If you knew what files or what folder will be added in the patch, you can deal with them in advance, for example, using deletefile() or deletedir().
