I would like to create a shorcut to uninstall from a folder in the programs menu.

According to the Microsoft Application Specification, you should not create an icon for uninstalling. That is what Add/Remove programs is for.
But, if you still want to, read the UninstallString entry for your app. From that you can use AddFolderIcon to create it.
