Are you meaning a text, printed in italic?
A MSI property can contain values. Types of this values is not strict, can consist of numeric or character symbols.
For text font and other appearance you can use visual controls, listed in InstallShield project.

You can use the TextStyle table to define additional text styles, e.g. for green italic Arial. You assign a name to this text style and then you can use it in static text or in a property, e.g.
{\GreenArial}Some Message
However the complete text will then use this style. You cannot italicize one word in a string.
